Hosting multiple domains on Exchange is not a problem as you can assign
multiple address spaces for which the server is responsible. Exchange
2000 and above allow you to auto generate SMTP addresses for your users
with Recipient Policies and you can set which address is primary on a
per user basis. The one designated as the default (primary) is the
address which will show up on the From address.
It is said that the capability to rename an Exchange server will be
available in Exchange 2003 Service Pack 1, but I would be cautious about
such a wide reaching utility. However, these are two single server
environments to which the capability is best suited. Just make sure you
have a good backup!
The other choice is to begin that consolidation to one server, and you
have stated this is your goal. You can use some existing tools to make
this happen: Active Directory Migration Tool (ADMT) to move the user
accounts, Active Directory Connector to synchronize the directory
information, the Migration Wizard to move the users from one server to
another and the InterOrg Replication Tool to move your Public Folders.
