Is it possible to have an Exchange 2003 server and an Exchange 2007 server coexist on a single domain during migration?

Yes, this is common when migrations are being done. An important thing to remember, however, is that free/busy information is not published in Exchange 2007 public folders by default. This would need to be activated for calendar interoperability between the two email systems.
