Yes, this is possible. You can change the "display name" for the user account and add a new SMTP address to the mailbox account. Make sure you set the new mailbox account as "primary." You may want to keep the old SMTP address on that account or move it to a catch-all mailbox for terminated employees to make sure you don't bounce back email sent to the old SMTP address.
