If you're running Exchange 2000 or Exchange 2003 Enterprise Edition (i.e., not Exchange Server Standard Edition), then you can install multiple Exchange Server stores. Your Exchange Server mail stores themselves have nothing intrinsically configurable to multiple SMTP domains like @apples.com and @oranges.com.
However, you could create Exchange Server recipient policies for each of these SMTP domains. You could set it up so that all mailboxes created on the first Exchange Server mail store are given the @apples.com SMTP proxy address, and all Exchange Server mailboxes created on the second store receive the @oranges.com SMTP proxy address.
