Unfortunately there is no way to achieve what you're trying to do using native Exchange Server tools. I suggest a search on Google for "Exchange Recovery" (or ping me offline at mailman at quest.com) … there are two third-party solutions on the market that I'm aware of that provide the functionality you're looking for.
