The Recipient Update Service (RUS) is an Exchange 2000/Exchange 2003 service that updates the recipient objects within a domain with specific types of information. You can schedule appropriate intervals to update the recipient objects. For example, the RUS updates recipient objects with address list membership and e-mail addresses at intervals scheduled by the administrator.
Two servers in the same forest/organization would share the same recipient update policy as defined for that enterprise. I think it would be worthwhile checking out information on RUS so you better understand the answer -- which is yes.
You can have the same proxy address span multiple servers, as long as you specify the policy to stamp a particular address space. Please take a moment to look at Microsoft's Recipient Update Service and the following screen shots.
